Cinnamon Tea as served at Cilu Bintang Estate

  • 1 Cinnamon stick
  • 1 teaspoon black tea
  • 1 liter water

Makes: 4 cups

    1. Cinnamon sticks have to be slow boiled to extract all the aroma, so bring the water to a slow boil. This usually takes about 5 minutes. Boiling fast will not brew the spices properly. You will note even after the water has come to a full boil, the color of the water is still only a pale yellow.
    2. When the water starts bubbling remove from heat and let it steep/rest for 15 minutes.
    3. Reheat the cinnamon flavoured water and add the tea leaves let it steep/rest for 3 minutes.
    4. Strain the tea through a fine strainer to ensure none of the spices and tea leaves end up in the cup.
    Serve hot or cooled with ice.
